OPTICUT – Industrial Validation
Industrial validation for the sorting of ham and loins in three quality groups

During the past months we have go on with the industrial validation. The proposed validation procedure have consisted in the use of OPTICUT probe to sort carcasses in two different quality groups : Good and PSE.
Hundreds of carcasses have been inspected with the OPTICUT probe in real operational conditions. A number of carcasses have been selected to compare the results provided by the probe with the reference methods. The reference method consist in the visual inspection of internal muscles to find quality defects.
