Quality inspection system

OPTICUT's objectives

OPTICUT's main objective is to validate a new carcass quality inspection system to objectively and reliably assess the quality of ham and loin (primal cuts) at 24 hours postmortem. This measure will allow to

  • Maximize the commercial value of the primal cuts by creating different product segments
  • Optimise the all the stages of the production process.
  • Determine the actual incidence of these types of meat.
  • Provide a tool that allows identify the source of the problem and apply corrective measures at the different stages of the production process.
