The main objective of OPTICUT is to develop a pig carcass inspection system to objectively and reliably assess the quality of ham and loin (primal cuts). This quality inspection is to maximize the commercial value of those meat parts by the creation of different product segments. OPTICUT will increase the efficiency of production processes and will allow to adapt the production to the actual demand as well as to reduce the use of natural resources and to determine the incidence of defective meat. The use of big data analysis will help to identify the source of the problem and to apply corrective measures at the different stages of the production chain.

This Manunet project aims to scale and validate OPTICUT technology, currently in TRL7, that is currently applied to the inspection of meat pieces (ham and loin) to achieve a TRL8 for the inspection of these parts at the carcass before cutting and deboning. OPTICUT represents a unique business opportunity for the partners of this project who hope to be able to boost their sales and access international markets, and to improve the competitiveness of end-users (slaughterhouses) and the meat sector in general.
