We have completed the construction and characterization of the first OPTICUT demonstrator. The demonstrator will be installed at the slaughterhouse to carry out the first tests with hams and loins. The objective of the test is to develop mathematical models to predict WHC and separate the meat into three quality categories, defined as good, fair/normal, and poor.

To develop the prediction models, the spectral data provided by OPTICUT will be used against the quality assessment made with the reference methods: ph45, pH24h, and internal visual inspection using a Japanese Pork Colour Standard (JPCS). The inspection will be carried out at 18-24h post-mortem.
